What makes a good bowl of ramen ?

A good bowl of ramen is made of :
- a fundamental taste base, called tare (sho, shoyu, miso), really concentrated
- a broth (bone or vegetal broth)
- home made ramen (alkaline noodles, long, silky and elastic, with good flour and lye of baked baking soda)
- toppings (vegetables, meats, soft boiled and marinated eggs, bean sprouts, garlic butter, ...)
- oil (anchovy oil, sesame olid, peanuts oil, black garlic oil, chinese red hot oil ...)
When all this is well made, and nicely combined in a bowl, you discover the real taste of ramens ! And there is nothing more comfortable than good ramens !
a Shoyu Tare
Mix
- 2 cup of soy sauce
- 1/2 cup of mirin
- 1/2 cup of sake
- 2 minced garlic cloves
- 1 spoon of minced ginger
- 1/2 cup of brown sugar
- 2 cup of dashi
Put everything to boil, and let reduce to 1/4 of the volume. Filter the result Your shoyu tare is ready !
You can use a saute mirepoix, and mushroom or leaks broth, in place of the dashi, to obtaint a more tasty complex tare.
